Clary Sage is a biennial herbaceous plant that can grow up to 1.50 m tall. Clary Sage can be ground directly and distilled without drying, in which case it's known as Green-Crushed Clary Sage, but it's often first cut with a windrower and then dried in the field for 1 or 2 days, in which case it's known as Dry-Crushed Clary Sage. Clary Sage Essential Oil is used in perfumery for its characteristic herbaceous note, followed by a distinctly amber/animal undertone, and as a fixative in fragrances. It is also used in aromatherapy, mainly for its "estrogen-like" properties that act on feminine comfort, and it has cosmetic virtues.
